2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
½ teaspoon cinnamon
½ teaspoon nutmeg
½ teaspoon mace
1 apple, peeled, cored, and grated
1 carrot, peeled, and grated
1 cup applesauce
½ cup honey
½ cup crushed pineapple, packed in juice, drained
Preheat oven to 350°F
- In a large mixing bowl, sift together the dry ingredients.
- Mix together the carrot, apple, oil, honey, until well blended. Add the eggs, one at a time mixing after each addition. Slowly add in the dry ingredients, mixing after each addition. Fold in the pineapple.
- Spoon into paper muffin cups about ¾ full and bake for 30 to 40 minutes or until a toothpick inserted in the center comes out clean. Cool on wire rack.
